Tradition and Challenge Started in Shinjuku in 2022
On December 1, 2022, we opened in Shinjuku. With the motto of 'Fusion of New Challenges and Tradition,' we have been exploring Edomae sushi, incorporating classical cooking methods from the Edo period while expressing them with modern ingredients and techniques. We have received high praise from local residents and customers from afar, and we will continue to refine deliciousness that aligns with the times while preserving the essence of Edomae.
